-Using cold water freshly drawn from the tap if possible as it contains air.
-Using finger tips for rubbing fat as they are the coolest parts of the hands.
-Using pastry knife or Spatula to mix as they are cooler than fingers.
-Rinsing the hands in cold water before handling the pastry.
-Handling the pastry as little as possible.
-Lifting and shaping the pastry with a rolling pin and a palatte knife.
-Relaxing the pastry in a cool place between the rolling and before cooking.
