The exam consists of two sections A and B. Section A is Compulsory and carries 30 Marks. Section B carries 40 Marks.
SECTION A (COMPULSORY)

(b) How can an aperitif be served as a starter

5. Wine knowledge helps the waiter/waitress to guide the guest when choosing a dish which matches well with the wine he/she is taking. Explain this statement. [5 Marks]

6. (a) What are the ingredients of a cocktail by the name “Kiss me Quick”. [4 Marks]

(b) Explain the procedures of making the said cocktail. [4 Marks]

SECTION B: CHOOSE TWO QUESTIONS

7. Discuss the factors that contribute to wine production in European countries. [20 Marks]

8. Discuss classification of wines and in each classification highlight two types of wines.
[20 Marks]

9. Alcoholic beverages earn catering outlets ¾ of the total profit earned. Discuss this statement. [20 Marks]
